Crock pot dinner

Tonight's food adventure was lemon-dill chicken in the crock pot. I'm not one for measuring so I'll leave you with the recipe as I found it in a cookbook (free on BookBub)!

Ingredients:
2 chicken breasts, boneless/skinless cut in half
1 cup low-fat sour cream
1 tbsp dill (I used dry dill weed rather than fresh dill)
1tsp pepper (I used the fresh ground stuff)
Zest of one lemon

Directions:
Zest the lemon, mix with pepper, sour cream, and dill in a small bowl.
Put 2tbsp of mixture in the bottom of your pot, spread it thin.
Add chicken in a single layer, I had to cut mine smaller than half so it wouldn't over lap.
Pour rest of mixture on top of chicken, spread evenly.
Cook on LOW 3-4hrs. My pot has 4hrs as a HIGH setting so I put mine on the 8hr LOW but turned it to warm after 3hrs while I worked on our sides.

The chicken came out amazing, just the right amount of seasoning to make it flavorful without being overpowering. I served it over brown rice and parmesan crusted asparagus.
